Breakfast is always a topic in indian household and a very important part of our diet.

Ingredients:
- 1 cup semolina (rava/sooji)
- 1 cup curd (yogurt)
- ½ cup water (adjust as needed)
- 1–2 tsp ghee
- Salt to taste
- 1 tsp grated ginger
- 1–2 chopped green chilies
- 2–3 tbsp grated carrot (optional)
- ¼ tsp Eno (fruit salt) or a pinch of baking soda
- Oil for greasing the molds
Steps To Make Rawa Idli:
1. Roast the Rava-Heat a pan, add 1–2 tsp ghee, and lightly roast the semolina on low flame until it releases a mild aroma.
Let it cool for a minute.
2.Make the Batter-Add 1 cup curd and ½ cup water to the roasted rava.Mix well to form a smooth batter.Adjust water if the batter feels too thick.
3.Add Spices & Veggies-Add salt, grated ginger, chopped green chilies, and grated carrot (optional).
Mix everything well.
4.Add Eno/Baking Soda-Just before steaming, add ¼ tsp Eno or a pinch of baking soda.
Mix gently do not overmix.The batter will become light and airy.
5. Fill the Idli Molds-Grease idli molds with a few drops of oil.Pour the batter into each mold, filling them about 80%.
6.Steam the Idlis-Place the molds in a steamer or idli cooker.Steam for 10 minutes on medium heat.Check by inserting a toothpick if it comes out clean, idlis are ready.
Remove the idlis gently and serve hot with coconut chutney or sambar.
